This flavourful pumpkin spread goes well with crispy bread slices BON CRISP with pumpkin seeds and cheese.
Ingredients
1 kg of pumpkin
2 tablespoons of olive oil
half teaspoon of cinnamon
2 tablespoons of tahini paste
2 garlic cloves
1 tablespoon of sesame seeds
1 tablespoon of date syrup
1 tablespoon of lemon juice
Some chilli pepper
Salt and pepper to taste
Crispy bread slices ‘Bon Crisp’
Preparation
Cut the pumpkin in pieces, remove the seeds and peel. Place the pumpkin cut in pieces on the baking tray lined with a baking paper, flesh with some oil, date syrup and salt, cinnamon, chilli. Place the baking tray with pumpkin to the oven and bake in 200oC for 45 minutes until the pumpkin become fully soft.
Blend the pieces of baked pumpkin with electric blender together with tahini paste, squeeze garlic cloves and flesh a tablespoon of lemon juice and add some salt and pepper, if necessary.
Add sesame seeds to the cooled-down spread and serve with crispy bread slices ‘Bon Crisp’.
