This emerald green spread can be made both of fresh and frozen peas. It goes well with crispy breads.
200 g of fresh peas (fresh or frozen)
1 teaspoon of lemon juice
5 tablespoons of olive oil
several twigs of fresh mint
salt and pepper to taste
crispy bread slices ‘Bon Crisp’
Boil the peas with mint in the water for about 3 minutes until they become soft. Rinse the cooked peas with some cold water to prevent them from loosing that emerald green colour.
Blend the peas, mint and olive oil with electric blender until you have a solid thick mass. You can control the thickness of the mass by adding more oil.
Add salt, ground pepper and lemon juice to the blended peas. Serve with crispy bread slices ‘Bon Crisp’.
